Re @sambrookjm 's breakdown of how the Hawkeye-IM-Kang cheese team works, Kang also gains 2 blue AP for each countdown expiring. So that's the remaining 6 AP you need to triple fire Kang's blue.
I don't use that team, but I would assume that yes, you would just retreat if the yellow AP supports don't fire.
As for the definitions of a cheese team, for me, it's mainly just limited to Kang and Multiple Man's alternate win conditions.
On a broader level, I feel like cheese teams are more like one trick ponies that rely on exploiting a single thing. I remember when I first started playing, people bemoaning Shang Chi-eese teams; I would think that firing a turn 0 winfinite with the new Moonstone would also qualify.

I believe that reference was to 5-star Hawkeye, 3-star Iron Man, and Kang. That cheese team works when you start with enough AP to throw Iron Man's yellow. Hawkeye will then fortify the countdowns, and when they resolve, you should have enough blue AP to send everyone away.
Yes it was. I used the "Eye" from Hawkeye instead of the "I" from IM40.
You can use Sanctum and SP//DR on Hawkeye and IM40 and Caps shield on Kang for up to 15 Yellow AP on turn 1. I tend not to bother using Boosts because it's rare that you don't get 6 but often you get 12. I tend to match a blue anyway just in case.
I think cheese teams are those that you can win easily and quickly with by circumventing the normal win conditions.

Ah yes, I'd forgotten the official title. The other was my suggestion at the time which amused me when said out loud in a broad Scottish or Liverpool accent...
